In this episode, I prepared a step by step recipe for pineapple beer so that you can follow along from home. Once you have it fermenting you need to wait 7 - 9 days before bottling out. This is the time that the yeast used to smash all the sugar and poo your bucket full of ethanol. Mine batches have been coming out at between 4.5 % and 6.5 % ABV after this first stage and they only get better in the bottles while they settle out.

The law has flipped and the country is dealing this in various ways. I am dancing on a rebellious line while maintaining a legal grounding as I agitate and move through this reality.

KwaZulu-Natal farmer Morgan Brand persistently sways farmers to think innovatively, especially in the midst of the covid-19 pandemic. This out-of-the-box thinking led the soil scientist to experiment with pineapple beer. His second mom, Besta Ntobela, who basically raised him on the farm where he grew up in Adelaide in the Eastern Cape, shared her secret recipe and Brand couldn’t resists an experiment. A few recipe tweaks later and Brand along with his college friends were connecting in a virtual tasting room trying their brew.
